Recipe Ingredients for Pasta alla Norma

500 grams | Pasta (eg spaghetti or pasta shells) |
2nd Eggplant | 100 grams |
Ricotta (Italian cream cheese) | 2nd Garlic cloves |
500 grams | tomato puree (finished product) |
2 tbsp | Basil, chopped |
1 pinch | Salt |
8 tbsp | Olive oil |
Pasta alla Norma Recipe Directions
1st Wash and clean the eggplants and cut into slices. Add salt and let stand about 30 minutes. Pat dry with kitchen paper, cut into cubes and fry in olive oil. Ricotta rub coarse.
2nd Noodles in boiling salted water until al dente. Remove garlic cubes and fry in a pan. Add tomatoes, basil and simmer until the sauce is nice and thick. Stir in eggplant and olive oil.
3rd Drain the pasta and toss with the eggplant and tomato sauce. On plates, sprinkle with ricotta cheese and garnish as desired with basil.
