Barley soup Recipe Directions
1st Bacon into small cubes. Peel the onion and chop finely too. Melt butter in a saucepan, fry bacon and onion is soft.
2nd Stir in barley, dust with flour, saute briefly. Pour the broth, bring to a boil, cover and let everything simmer for 40 minutes.
3rd Leeks, carrots, celery and potato peel or wash and clean. Everything possible in small cubes and add to the soup. Simmer 20-30 minutes, again, leave until the barley is tender.
4th Stir cream into soup. Season with salt and pepper. Chives and cut into rolls, stir into the soup.
INFO: Serve with down-home meal at the best typical wines from South Tyrol. As red wines fit well Vernatsch or Lagrein than whites Müller-Thurgau and Pinot Blanc.
