Wild rice salad with walnuts and dried cranberries preparation:
Walnuts in a frying pan lightly brown anrösten.In a pot of water with one teaspoon salt, bring to a boil. Add rice, stir well and simmer over low heat with lid slightly for 40-45 minutes. The rice is cooked when it is soft and has absorbed all the water from the pot. Then the rice from heat and let stand for 10 minutes.
In a small bowl, combine the garlic, orange zest and the Mustard thoroughly. Stir in orange juice, vinegar and salt and finally the oil stirring constantly, pour in slowly. Everything again mix well.
Cook the rice in a large bowl and add half of the finished dressings. Mix well so that the whole rice is covered with the mixture. Let rice cool to room temperature.
Just before serving give walnuts, peppers, scallions and snow peas to the rice and toss. Add the remaining dressing and mix well again.
