Cream of pumpkin soup with apple Recipe Directions
Peel the shallot and garlic and chop. Peel pumpkin, remove seeds and dice. Wash apples, remove core and chop. Heat oil. Sauté onions and garlic in it. Add pumpkin and sauté about 5 minutes. A third of pumpkin and set aside.
Potatoes and vegetable stock give the remaining pumpkin. Bring to a boil and cook vegetables in about 15 minutes. Puree everything. Add wine and 150 ml of soya cream, heat but no longer cook. Season with curry, salt and pepper. Pumpkin and apple pieces and add miterwärmen. Serve with remaining soy cream, pumpkin seeds and cilantro leaves.
