Recipe Ingredients for Yellow pepper soup french recipe

1 pc Onion
2 pcs Carrots
1 Stg Celery
3 tbsp Olive oil
8 St yellow peppers
5 St medium-sized potatoes
150 ml Milk
2 pcs Bay leaves
some grated Parmesan cheese
some Croutons (fried bread crumbs)
4 tbsp cooked rice
some Salt and pepper

Yellow pepper soup french recipe Recipe Directions

Peel the onion and carrots. Together with the small chop celery. The chopped vegetables in two tablespoons of olive oil saute until it is lightly browned.

Meanwhile, wash the peppers and clean. Peel potatoes and cut into large cubes. Both give the sautéed vegetables.

Add the milk and fill up everything with water so that the vegetables are covered with liquid. Simmer about 20 minutes, or until the potatoes are cooked thoroughly.

Puree the soup to the blender. Add the bay leaves and season to taste.

Serve the soup hot. Decoration idea: a splash of olive oil, parmesan cheese and some croutons to give something in each plate. Looks nice a decoration with the cooked rice.
