Brassato Roast Recipe Directions
Carrot and celery and cut into very small cubes. Dice the onion and coarsely chop the garlic finely. Anything with rosemary, salt and nutmeg mix.
Sear the roast on all sides in a frying pan in the preheated oven and hot (200 °) roast about 1 hour.
In the same pan saute the vegetable mixture, stir in tomato paste and sprinkle in the flour. Add the bay leaves and add the red wine. Thicken slightly and season with salt, pepper, nutmeg and sugar.
