Asparagus and mushroom patties Recipe Directions
Wash asparagus and remove the woody ends (usually baby asparagus need not be peeled). Cook in the broth in about 20 minutes.
Meanwhile, brush the mushrooms and cut into quarters or, depending on size, cut in small pieces. Melt butter and saute the mushrooms in it briefly. Dust with flour and fry briefly. Pour in broth and asparagus cream (up to 2 tablespoons) and cook about 2 minutes. Pies baking in the hot oven for 5-10 minutes.
Meanwhile, mix egg yolks with the remaining cream and bind the sauce with it. Add asparagus pieces and heat it all over again, season with salt, pepper and lemon juice.
Asparagus stew in the hot pie filling and garnish with parsley. Serve immediately.
