500 grams Asparagus
1 pc Avocado
1 / 2 St Lettuce
1 Pk Shrimp in brine
5 tbsp Creme fraiche
2 tbsp Natural yoghurt
1 tsp Curry
1 tbsp Cognac (brandy)
1 Prov Lemon juice
1 / 2 bunch Tarragon
Salt, white pepper

Asparagus and avocado with prawns Directions

Wash lettuce and spin dry. Tarragon leaves and pluck off small pieces.

Shrimp in a colander and let drain well, rinse down.

Asparagus spears cut into 4 pieces. Avocado in half, remove core and then peel the halves. Avocado flesh into pieces, the same as the asparagus. Asparagus heads lay extra.

Make a salad dressing from the specified ingredients and season to taste with a little cognac.

Lettuce leaves cut into thin strips (chiffonade).

Chiffonade fill in 1cm thick glasses. Then alternately avocado, crab and asparagus pieces layers.

Use a spoon to scoop the salad dressing over it. Garnish with asparagus tips. Finally, sprinkle the chopped tarragon.
