Airy mousse au chocolat Recipe Directions

Separate eggs, stirring yolks with vanilla sugar until foamy, beat egg whites stiff with salt. Whip cream until stiff. Melt the chocolate, place in a mixing bowl and let cool. Stir until the egg yolks, then gently fold in the cream and then the beaten egg whites.
