Smoked Tuna with Yogurt Sauce Recipe Directions
1st Drain the tuna, remove from the tin and teasing with two forks into pieces.
2nd Mix egg yolk with 1 tablespoon lemon juice, beat the oil underneath. Add the tuna pieces and puree everything with an electric hand blender very fine. Stir in yogurt so much that a creamy sauce. Season with salt, pepper and the remaining lemon juice. Stir in 1 tablespoon of chopped herbs.
3rd The smoked salmon slices with the tuna sauce on four plates and garnish with the remaining herb leaves. Possibly. garnish with nasturtium leaves.
Serve with a well chilled Riesling.
