Ricotta pasta sauce Orecchiette alla ricotta preparation:
Cook the pasta in salted water until al dente cooking. Cut the tomatoes into cubes.
Heat the oil in a frying pan. Squeeze the garlic into it and saute briefly. Add the chopped tomato and season with salt, sugar and a pinch of finely chopped chilli. Simmer over medium heat for about 10 minutes.
Mix ricotta cheese with the tomatoes and season with salt and pepper. Strain the pasta and toss with the sauce. Sprinkle with basil.
