Apricot Chutney

Ingredients for Apricot Chutney

4 pcs Apricots
1 pc Onion
1 pc Garlic
1 pc Ginger
2 tbsp Olive oil
some Salt and pepper
1 tbsp Sugar
1 pc Lemon untreated
1 bunch Basil

Apricot Chutney Directions

Finely chop the apricots. Onion, garlic and chop the ginger. Sauté in oil, then add the apricots. Season with salt, pepper and sugar. Cover and cook on low heat for 4-5 minutes. Finely grate the lemon zest and squeeze the juice. Add to the apricot.

Continue braising, until all liquid has evaporated. Allow to cool. Just before serving, chop the basil and stir in the chutney. Pairs well with grilled meats, especially lamb. But even with cold roast meat.
